simple & healthy breakfast couscous



for 1 portion

prep 3 tbsp of couscous according to the package information 
season with salt, pepper, lemon juice and a dash of good quality olive oil
toss in some greens and mix (I used watercress , baby spinach goes perfectly too)
boil and egg to your liking and top the dish with it (I like mine almost hard-boiled so for medium-sized egg I boil it for 3 minutes)
enjoy & feel healthy and fresh :)

    1. Thank you very much! I'm planning on making some simple but fancy breakfasts in the future and hopefully share them here :) It's always lovely to have something savory and healthy at the beginning of the day.
